BB Ribs - suggestions

Have a couple of slabs that I want to grill Sunday. I've done this many times before but would be interested in trying something a little different. Anyone have any suggestions for marinades, rubs, & sauces. I know some of you guys make your own.

Good stuff, ISD. cbxjeff, I personally like dry rub and beef ribs, but for pork you can whip together a quick marinade/baste of honey, light oil, salt, pepper, cayenne (or other red chili) powder, onion powder, garlic powder, ground dried thyme, allspice, and nutmeg.

I don't have any measurements, 'cause I usually wing it, but this is for a Carribean Jerk style flavor. Believe me, it is really good. Just go sparingly on the thyme, allspice, and nutmeg. Keep the onion and garlic powders to a minimum as well.

If you don't want it too spicy but you still want the nice red coloring the chili powder gives, add paprika too achieve the desired color.

I would start with a base of equal parts honey and oil (throw in a little butter if you want). Add the salt and pepper till it gets a gritty texture and then add little bits of the rest to your taste. Remember, the flavor will be strong when tasting so just get a little on the tip of your finger. Drink milk or some other palette cleanser between tastings.

I like to

add rasberry preserves or marmalade to Ken Davis BBQ sauce,lay it on thick and cook a good glaze onto the ribs.Everybody here loves 'em like that,beef or pork.I am grilling some for the 4th myself.

Wonderful pork rub

Here is a rub that worked well for me two weeks ago on two racks of pork spare ribs, smoked to perfection, try it some time.

1/8 cup black pepper

1/4 cup paprika

1/4 cup sea salt

1/4 cup sugar

2 tbs garlic powder

2 tbs onion powder

1 tbs cayenne pepper (+ or - to taste)

Yum!!!!!

(EDIT)

I rub down the ribs with yellow mustard to add some zing and give adhesion to the rub.

Set up that "smoker" early, depending on when you want to eat, "low and slow" is the way to go, plan accordingly :-)

I use a grill mates applewood rub then smoke for three hours using cherry wood and a bit of hickory. I pull them off after three hours of smokin' then start the coals and BBQ them til almost done then lather them in sweet baby ray's BBQ sauce. let the sauce carmelize and they are ready. been doing them this way for the last couple months. mighty tasty!

boil pork ribs slowly in salted/peppered watter for 15-20 min or untill tender.drain the water off and cover them with a can of thawed applejuice concentrate and let soak till cooled.start bar b q ing the ribs and re apply the rest of the applejuice till it is gone.

mix together ketchup,molasses,brown sugar, honey,sea salt and pepper,kayane or chili pepper powder,fine chopped fresh garlic. dont have a recipe for the ratios,just know by the look of it and the taste if it is right. you should have a bowl full of a dark brown thick sticky sweet,but slightly hot bbq sauce with visible amounts of garlic.loooots of molasses and honey in this mix!about equal parts of ketchup,molasses/brown suggar,and honey,use dark brown sugar to thicken the mix up(wrights liquid smoke can be used to give it a stronger smokey flavor)

continue to slow cook the ribs preferably over hardwood like oak or something else with a smokey goodness.flip ribs OFTEN and re apply sauce each time.you know your ribs are done when the only thing holding them together is the sticky bbq sauce.THIS STUFF WILL BE STIIIIIIIIIIIIIIIICKY! dont forget to rinse your plates before going to bed...lol
give it a try...its easy to do,and if you get it right you will be complimented by all the pork lovers at the party.my wife hates pork and she always wants me to make these ribs for her!(this bbq works great on chicken too)

Looks like you guys have done this before! Looks like I'll be doing this all summer. Paws, I just bought some of that GM applewood rub & will try it. Lucky, that rasberry thing sounds good. I pretty have the whole summer planned now. Thanks guys.
