About the same as you descibed....Pork, Beef Brisket, Chicken, or Sausage. Put a rub on them then slow cook in a smoker. Sauces differ with the region, here we use alot of pepper or mustard

used to be in Georgia. Last time I was there there wasn't anything like that around. I used to order 'two hot pigs' and a tall Bud. Friend of mine said all those places are gone now.

i am picky about bbq food so i do it myself!chicken,ribs(pork or beef)flat iron steaks,bbq beef roast(cooked like brisket),kabobs of all sorts,i even bbq bacon!i use a gas grill with a chip tray i built out of sheet metal in which i use hickory and apple wood.plus lotsa homemade sauces and marinates and spice rubs.

i use garlic powder,bacos,and brown sugar on pork and beef.it was a weird one i came up with that actually tastes damn good!
