I don't mean the "rare medium well" thing.
Which cut, lean or marbled, grilled, fried,.....
I like Ribeye, heavy marbled, grilled over mesquite, medium.
Pass the napkins!

Time out!
No fair hauling your hand picked choice of the herd to the butcher.
Nothing comes close. Supermarkets pale in comparison to home grown beef.

T-bone

that has been sitting in a bag of butter, garlic and Adolph's for three days and then sprinkled with Cavender's Greek seasoning right as it is thrown above the coals. Medium rare, so tender after soaking you don't even need a knife to cut it. I've spoiled my kids with this approach. They won't even eat a steak when we go out anymore.

My grandfather was a friend of old man Cavender. He would come back from Harrison with a huge bucket of the stuff. Lasted forever. Been eating Cavender's on steaks for forty years now.

The best piece of meat

The best piece of meat besides that gf I had before my wife was a steak in Africa. Mombasa, Kenya at Very Nice eatery. I can't even tell you what kind of meat it was. But, it was awesome. I was there in the 70's and can still remember the waiters face when we didn't want wine with dinner, he got offended.

BBQ in winter

I am a hard core BBQin' man!I have a covered deck on which is my grill.I just dress appropriately for whatever the weather is to cook.I will grill even when it is in the teens outside. All my friends think it is funny when I have them over in the wintertime for a BBQ,but i always create such grilled masterpieces that they ALWAYS show up!

I lived in Denver for about a year and a half, and grilled in the snow on several occasions. Got some funny looks from people staring at me though their windows.......What was a Texas boy to do?

Not much on beef

sirloin strips in the fajitas every now and again, and I eat the fat and gristle that my wife refuses to touch when she eats a steak, but I read the average American dies with 20 pounds of undigested red meat in his.her bowels. No thanks. I'll stick with chicken and fish. Much better for you.

Alright this might take awhile! First off I like a Ribeye about one inch thick, alot of marbling, or a good Kansas city Strip. Also like to do venison backstrap, and buffalo this way. First I let the meat set uncovered in the fridge for a week, gives it time to breath and start to break down a little. Then in a gallon size bag I put Chopped up onion, minced garlic, salt, course ground pepper, chile powder, wochestire sauce, spicy brown mustard, japlepeno juice, and a beer (Shiner bock, Miller Lite) Then I let it Marinade overnight or about eight hours. Before I grill I slice some fresh japlepenos and onion and put them on foil with olive oil salt and pepper and garlic salt. I grill everything over charcoal with a little Mesquite or Pecan. Then I put some butter on them, and sprinkle some shredded chedder cheese on them. Cook to medium, serve with the japlepenos and onion on the side with green beans and steak fries, and an Ice Cold Miller Lite! If I'am in a hurry salt, pepper, garlic, butter, add fire and eat!

nothing on it. Best I ever had was in St. Paul, Minnesota, where, incidentally, 'medium rare' (West Coast) is 'Medium' in Minnesota speak. It just melted in your mouth.

cross cut, with a melted butter and green olive garnish. Along with a baked potato with all the trimmings and a bottle of wine.

But truly, once you've had a good filet mignon, how can you bear to eat anything else? You might as well try to fry a stewing chicken.
