just waiting for Vaq to ship me some mesquite.I remove the heat convection shields from 2 burners and put a cast iron skillet directly on the burner with smokin' wood in it.works great!BRING ON THE MESQUITE VAQ!
I use Pecan shells soaked in water, to keep the flames down when I smoke a brisket! I've got two big Pecan trees in my yard, so I make use of them!

just had mentioned the region that the mesquite is coming from to some of my BBQ bro's local here and they are jealous as all hell.They know about that mesquite from that part of Texas.been trying to make a deal with me for when I get it,I told them No DEAL!
