Twenty seconds on each side bloody and cool in the center. That way you can use the blood for gravy with your mashed taters.
but no fat. Filet Mignon only. But be careful in the Midwest or some place like Ruth Chris's Steak house. When they cook at thousands of degrees the naming system is different. Med rare = Medium in places like that. I am forever grateful to a watress near Great Lakes, Illinois, for pointing this put to me ahead of time.
