I think we are the second largest hog producer and we certainly have a lot if not the most pork BBQ joints in the nation.
and some of the best.
People try to campare it to Texas/KC/Memphis but it is too different. I like me some brisket but it's just not the same. I remember the first BBQ sandwich I ordered on the way to windsurf at Hatteras. I looked at it and it had slaw on it. I grows on ya after a while and now it is naked without it. Never could get used to the ones that put the mustard in it though.

ketchup or tom sauce they put yellow mustard in. More in South Carolina though.
With the slaw on a pulled pork, but now I enjoy it occasionally.
Actually good, dogs & burgers also, but Mustard on BBQ. South Carolina can keep that one
